Southwest Turkey Burgers with Mexican Corn Relish

Summer is all about grilling and what better to throw on the grill than southwest turkey burgers that get topped with a tasty Mexican corn relish!
We love getting outside during summer and cooking on the grill. Burgers are always a big hit and they are so easy to add tons of flavor to and customize for everyone’s individual taste. These southwest turkey burgers are amazing and get an extra helping of flavor thanks to a quick Mexican corn relish.

Whenever we are planning a backyard BBQ, I always make a stop at our local store for ingredients. They have everything I need to make these burgers and plenty of snacks and sides to go along with them. One favorite is bacon ranch potato salad that starts with the red bliss potato salad from BJ’s Wholesale Club.
Ingredients for Grilled Turkey Burgers

- Ground Turkey – Don’t use the leanest ground turkey or the burgers will dry out during cooking.
- Diced Green Chiles
- Spices and Seasonings – Onion Powder, Chili Powder, Cumin, Salt, and Pepper
- Lime Juice
- Pepper Jack Cheese
Ingredients for Mexican Corn Relish
The Mexican corn relish is amazing on top of the burgers but you can use it in all kinds of recipes. It goes great as part of a southwest inspired salad too.

- Cider Vinegar
- Sugar
- Mustard
- Spices and Seasonings – Turmeric, Crushed Red Pepper, and Salt
- Corn on the Cob or Cooked Corn
- Green Bell Pepper
- Red Onion
One of the great things about this recipe: you can make the burgers and corn relish ahead of time! Just keep the burgers cold until ready to grill and the corn relish in an airtight container in the refrigerator.

Southwest Turkey Burgers with Mexican Corn Relish
Ingredients
- 1 pound ground turkey
- 1/2 cup diced green chiles
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 Tablespoon lime juice
- Salt and pepper
- 1/2 cup shredded pepper jack cheese optional
Relish:
- 1 cup cider vinegar
- 1/3 cup sugar
- 1 Tablespoon mustard
- 1 teaspoon turmeric
- 1 Tablespoon salt
- 6 ears corn cooked and cut off the cob
- 1 green pepper diced
- 1/2 red onion diced
- 1/8 teaspoon crushed red pepper
Instructions
For the Burgers:
- Combine turkey through salt/pepper. Mix well and form into patties.1 pound ground turkey, 1/2 cup diced green chiles, 1 teaspoon onion powder, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1 Tablespoon lime juice, Salt and pepper
- Heat grill to medium-high heat and cook burgers for 4-5 minutes on each side or until cooked through.
- Top with shredded cheese and let melt (optional). Remove from grill.1/2 cup shredded pepper jack cheese
For the Relish:
- Combine cider vinegar, sugar, mustard, turmeric and salt in a saucepan. Bring to boil and boil for 3 minutes. Remove from heat and let cool.1 cup cider vinegar, 1/3 cup sugar, 1 Tablespoon mustard, 1 teaspoon turmeric, 1 Tablespoon salt
- Combine corn kernels, green pepper, onion, crushed red pepper and vinegar mixture in medium bowl. Stir well. Refrigerate until ready to eat.6 ears corn, 1 green pepper, 1/2 red onion, 1/8 teaspoon crushed red pepper
