Pesto Hearts of Palm Grilled Cheese

At the beginning of each spring, I buy a basil plant with the hopes that it will give me enough basil to enjoy throughout the summer. Last year, it died 2 weeks in. This year, it is WAY overproducing so I have a TON of basil. When one has a bunch of basil, it is always best to make some basil walnut pesto with it. Then, combine that delicious basil with a few other ingredients to create a truly mouthwatering pesto hearts of palm grilled cheese.

Pesto Hearts of Palm Grilled Cheese

I will be totally honest that I had never really considering using hearts of palm in anything other than a salad. But, I got these Reese Medallion Cut Hearts of Palm and they looked like the perfect addition to my grilled cheese. Reese Hearts of Palm are Non-GMO Project Verified, vegan/vegetarian friendly and, most importantly, delicious! They are definitely great in salads but can be used in so many other ways from casseroles to pizza toppings to appetizers. 

I snacked on a few hearts of palm while I made my grilled cheese and they are so tasty. You could even add some Reese Artichoke Hearts into this grilled cheese too for the ultimate Heart to Heart recipe. 

Ingredients for Pesto Hearts of Palm Grilled Cheese:

2 slices thick bread
3 Tbsp basil walnut pesto
8-10 Reese Medallion Cut Hearts of Palm
2 slices Jarlsberg cheese
2 slices Muenster cheese
1-2 Tbsp butter

Let’s Make It:

1. In a small bowl, combine hearts of palm and 2 Tbsp pesto. Stir to coat.

2. Butter the outside of each piece of bread. Divide the remaining 1 Tbsp pesto between the inside of each slice of bread.

3. Heat pan over medium-low heat. Add one slice, buttered side down to pan. Top with cheese and pesto covered hearts of palm. Top with remaining slice of bread, buttered side up. Cook for 2-3 minutes or until lightly browned. Flip sandwich over and cook for another 2-3 minutes or until lightly browned and cheese is melted. 

This grilled cheese makes an amazing lunch or, increase the recipe and serve this for dinner to the family. They will fall in love with Reese Hearts of Palm and ask you to make this sandwich over and over again.

    This so delicious. The pesto brought this grilled cheese to a whole new level. It is running out of words how to describe it but my entire family loved it. Thank you for sharing this.
