These boozy Moscow mule popsicles, concocted with ginger beer and vodka and flavored with lime and honey, are a fun and refreshing option for a barbecue, mid-day lunch, or a dinner party.Â
At some point in their lives, every adult wants to wants to be a kid again! I love this simple recipe because it allows adults to act like kids with adult privileges. These Moscow Mule Popsicles are bursting with flavor and really the best of both worlds.

It’s fun to surprise guests with this icy treat with a punch! And with just a few ingredients needed to make these adult popsicles, you can make a batch so easily.
Psssst, this may be obvious, but you may want to make sure the kids don’t get ahold of these when you pull them out of the freezer!
Moscow Mule Popsicle Ingredients
- Ginger Simple Syrup – This is so easy to make. You’ll just need sugar, water, and fresh ginger.
- Lime Juice – Freshly squeeze juice works the best here.
- Vodka
- Honey
- Ginger Beer

When you are being a kid again, the last thing you want to do is work! So, one of my favorite things about this recipe is that you can whip up a delightful treat to serve with very little effort! They takes just about 40 minutes to make, excluding the freezer time.
Most of that time you will be creating a flavorful ginger simple syrup by letting ginger seep in sugary water for about 30 minutes. Creating homemade simple syrup is as easy as combining sugar, water and whatever other flavors, like ginger, you want together.

For the best results, these boozy popsicles need to freeze overnight, so plan ahead and make these the day before.
If you are still unsure about this recipe because you don’t know how to serve popsicles to adults, it’s simple! You can easily make them look sophisticated and appealing by pouring them into clear popsicle sleeves and arranging them in a pretty container just before serving.
I order the clear sleeves from Amazon but they also freeze well in classic popsicle molds.

Moscow Mule Popsicles
Ingredients
Ginger Simple Syrup
- 2/3 cup water
- 2/3 cup sugar
- 2 inch piece fresh ginger
Moscow Mule Popsicles
- 3/4 cup lime juice
- 1/2 cup vodka
- 2 Tbsp honey
- 12 oz ginger beer
Instructions
- In a medium saucepan, combine water and sugar. Bring to a boil and stir until sugar is dissolved. Boil for additional 5 minutes. Remove from heat, add ginger and let steep for 30 minutes.2/3 cup water, 2/3 cup sugar, 2 inch piece fresh ginger
- In a pitcher, combine simple syrup, lime juice, vodka, honey, and ginger beer. Stir well to combine.3/4 cup lime juice, 1/2 cup vodka, 2 Tbsp honey, 12 oz ginger beer
- Pour mixture into popsicle molds. Freeze for at least 8 hours.
