Hoisin Pork with Snow Peas

Healthy cooking sometimes gets a bad reputation.  It is labeled as flavorless, difficult to make, expensive to buy, blah, blah blah.  I’m here to share a recipe for hoisin pork with snow peas that totally negates every one of those claims.  This dish is amazing delicious, so easy to make and pretty healthy to boot.  Oh, you can totally make it gluten free just by checking ingredient labels before you buy too! #winning

With a three year old who likes to climb anything and everything in my house, I am always struggling to make recipes that taste good but don’t require a ton of prep work.  Prep work equals finding my son standing in a {closed} window or trying to wear our breakfast area pendant light as a hat.  This dish requires very little prep work or oversight during cooking which makes it really ideal.

Hoisin Pork with Snow Peas
Ingredients
  • 1 cup hoisin sauce
  • 1/2 cup soy sauce or tamari
  • 1/4 cup rice vinegar
  • 1 Tbsp lemon juice
  • 8 garlic cloves minced or thinly sliced
  • 1.5 - 2 lb pork tenderloin
  • 2 cups snow peas trimmed
  • 2 Tbsp sesame seeds
  • green onions sliced
Instructions
  1. In a large bowl, combine 1/2 cup hoisin suace, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar, lemon juice and 4 garlic cloves. Stir well to combine.
  2. Add pork to a ziploc bag or large bowl with lid. Pour marinade over the pork and let marinate in the fridge overnight.
  3. Preheat oven to 400 degrees. Discard marinade and place pork on baking sheet and cook for 30 minutes.
  4. Steam snow peas for 5 minutes.
  5. In a small saucepan, combine 1/2 cup hoisin sauce, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar and 4 garlic cloves. Bring to a boil over medium heat. Reduce heat and simmer for 5-7 minutes or until slightly thickened.
  6. Place snow peas on platter and top with sliced pork. Drizzle with reduced hoisin mixture. Sprinkle with sesame seeds and green onions.

This meal looks amazing on a plate and is perfect for an easy meal that you can serve at a dinner party too.  Just pop it in the oven and set the timer.   You could even toss the snow peas in with the pork towards the end of the cooking time if you didn’t want to steam them.
