Hoisin Pork with Snow Peas

Ingredients

  • 1 cup hoisin sauce
  • 1/2 cup soy sauce or tamari
  • 1/4 cup rice vinegar
  • 1 Tbsp lemon juice
  • 8 garlic cloves minced or thinly sliced
  • 1.5 - 2 lb pork tenderloin
  • 2 cups snow peas trimmed
  • 2 Tbsp sesame seeds
  • green onions sliced

Instructions

  • In a large bowl, combine 1/2 cup hoisin suace, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar, lemon juice and 4 garlic cloves. Stir well to combine.
  • Add pork to a ziploc bag or large bowl with lid. Pour marinade over the pork and let marinate in the fridge overnight.
  • Preheat oven to 400 degrees. Discard marinade and place pork on baking sheet and cook for 30 minutes.
  • Steam snow peas for 5 minutes.
  • In a small saucepan, combine 1/2 cup hoisin sauce, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar and 4 garlic cloves. Bring to a boil over medium heat. Reduce heat and simmer for 5-7 minutes or until slightly thickened.
  • Place snow peas on platter and top with sliced pork. Drizzle with reduced hoisin mixture. Sprinkle with sesame seeds and green onions.
