Healthier Homemade Mexican Pizza

Mexican pizza is a drive thru favorite that is so easy to make at home. This healthier homemade Mexican pizza is the perfect replacement for the trip through the drive thru and has so much flavor that everyone will cheer over pizza night at home.

Swapping ingredients is a great way to make family favorite meals a little healthier. Right now, my family is in love with using cauliflower as a super food whenever possible and that includes our pizza nights too.

Our family loves having pizza night once a week. Everyone gets to put their favorite toppings on their pizza and we spend quality time as a family.

Recently, we tried swapping a traditional pizza crust with a cauliflower pizza crust for a healthier twist on the traditional pizza night. I went with a cauliflower pizza crust that was at least 80% cauliflower so we were really increasing our vegetable intake.

Copycat Mexican Pizza Ingredients

  • Cauliflower Pizza Crust – We used a cauliflower pizza crust to make this a healthy Mexican pizza. You can easily substitute your favorite regular thin pizza crust.
  • Ground Beef – Go for an extra lean version, if possible. I usually do 93/7.
  • Taco Seasoning – Homemade or store bought work equally as well.
  • Taco Sauce – I like to buy the Taco Bell version but any brand will work.
  • Shredded Cheese – I usually buy the Mexican blend from our store.
  • Fresh Tomatoes
  • Avocado

How to Make a Homemade Mexican Pizza

This Mexican pizza copycat is so easy to make! Depending on which type of crust you choose, you may have to pre-cook it before adding toppings.

You’ll brown the ground beef and add the taco seasoning. Then, layer your pizza with taco sauce, ground beef, and cheese before baking a little bit longer. Once it is all baked, top with diced tomatoes and avocado.

Ingredients

  • 1 cauliflower thin style pizza crust
  • 1/2 pound lean ground beef
  • 1 package taco seasoning
  • 2/3 cup taco sauce
  • 2/3 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/2 avocado diced

Instructions

  • Cook pizza crust according to directions.
    1 cauliflower thin style pizza crust
  • Meanwhile, brown ground beef in skillet over medium heat; stirring to crumble. Stir in taco seasoning and 2 Tbsp water. Mix well.
    1/2 pound lean ground beef, 1 package taco seasoning
  • Remove pizza crust from oven and spread taco sauce onto it. Top with ground beef and shredded cheese. Return to oven for 5-7 minutes.
    2/3 cup taco sauce, 2/3 cup shredded cheese
  • Top with diced tomatoes and avocado.
    1/2 cup diced tomatoes, 1/2 avocado

Notes

  • You can substitute with a regular thin pizza crust. Simply follow the baking instructions on the pizza crust packaging.
  • You can lighten this recipe even more by substitute ground chicken or ground turkey for the ground beef.
