Chicken Bruschetta Pizza

Pizza night is probably my entire family’s favorite night of the week. They love putting together their own creations and I love seeing what their favorite toppings are for the week. Recently, we put together what might be the best combination ever: a chicken bruschetta pizza.

Chicken Bruschetta Pizza

The best part of this pizza is that you can easily use convenience ingredients like pre-made pizza crust, pesto and even rotisserie chicken to get it ready in only 15 minutes! That is perfect for those crazy busy nights where you are thinking of take-out versus making dinner at home.

Ingredients for Chicken Bruschetta Pizza:

1 large pizza crust
1/2 cup basil walnut pesto
1 cup shredded cooked chicken breast
1 cup roasted grape tomatoes
6-8 slices fresh mozzarella cheese
1/4 cup balsamic reduction
Fresh basil for garnish

Let’s Make It:

1. Preheat oven to 400 degrees. Line a rimmed baking sheet with foil. 

2. Place pizza crust on prepared baking sheet. Spread pesto on top of pizza crust. Scatter chicken and tomatoes on top of pesto. Lay mozzarella on top. Bake in preheated oven for 10 minutes.

3. Drizzle pizza with balsamic reduction and bake for an additional 5 minutes. Top with chopped basil before serving.

This pizza is like a flavor explosion. It tastes so good. I also topped it with burrata cheese once and it was amazing so definitely give that version a try too! Just like with any pizza, play around with the toppings until you find the combination you love!
