Fajita Ranch Pizza

One of our favorite things to do when we have a small group of friends over is have a make your own pizza night.  We’ve done homemade pizza crust and some pre-made pizza crust as well. Recently, I’ve gotten into using naan or flatbread for pizza crusts and it is just so easy. Last time, I made a fajita ranch pizza that may be new favorite.

Chicken Fajita Ranch Flatbread Pizzas

My stomach never handles tomato based pizza sauce very well so I always try to make something like a grilled cheeseburger pizza or peach prosciutto pizza. This fajita ranch pizza uses a light garlic sauce and then is topped with delicious vegetables before being drizzled in ranch dressing. I also made a version where the ranch was the actual pizza sauce and it was delicious too. So, be sure to play around with it and find what you like best.

Ingredients for Fajita Ranch Pizza:

4 naan or small pizza prepared pizza crusts
1/2 cup olive oil pizza sauce
1 Tbsp oil
1 bell pepper, cut into strips (I use different colored ones)
1/2 red onion, thinly sliced
2 Tbsp fajita seasoning
1/2 cup shredded, cooked chicken breast
1 jalapeno, thinly sliced (remove seeds for less heat)
1/2 cup shredded pepper jack cheese
1/4 cup ranch dressing
3 Tbsp cilantro, chopped

Let’s Make It:

1. Preheat oven to 400 degrees. Line a rimmed baking sheet with foil. Place naan or pizza crusts onto prepared baking sheets. Brush with pizza sauce.

2. Heat oil in a medium pan over medium heat. Add pepper and onion. Season with salt, pepper and fajita seasoning. Cook for 1-2 minutes. Add chicken and jalapeno slices and cook for an additional two minutes. Divide between prepared naan. Top with cheese. Bake in oven for 5 minutes or until cheese is fully melted.

3. Remove pizzas from oven and drizzle with ranch dressing and top with cilantro.

We have a vegetarian living with us so we skip the chicken on this one for her and it is still delicious. You could even throw some black beans on there to replace it. The best part about make your own pizza night is being able to customize your own pizza anyways so have fun with the toppings.
