You can easily use kale in place of the spinach and substitute regular shredded potatoes in place of the Southwestern version. I just love the combination of the mild spices from the potatoes and fresh spinach.

Ham, Potato and Spinach Pie

Ingredients

  • 8 oz Smithfield Anytime Favorites Cubed Ham
  • 6 eggs
  • 1/2 cup heavy cream
  • 1 1/2 tsp cumin
  • 1 lb refrigerated Southwestern shredded potatoes
  • 1 cup shredded Gruyere cheese
  • 1 cup chopped fresh spinach
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 375 degrees. Line a round pie pan with parchment paper.
  • In a large bowl, lightly beat eggs. Add in ham, cream and cumin. Stir in potatoes and 3/4 cup cheese. Stir in spinach. Season with salt and pepper. Pour into prepared pan. Top with remaining cheese.
  • Cover with foil and bake in preheated oven for 25 minutes. Increase heat to 400 degrees, remove foil and bake for an additional 10 minutes or until the middle is set.
