Dark Chocolate Oatmeal Fig Bars

I love a good celebration. From birthdays to anniversaries to weekends, I love sitting back and celebrating the everyday moments in life. There are two key pieces to any celebration in my mind: a delicious latte and something sweet to enjoy.

For our upcoming anniversary celebration, I am planning to use some of the delicious figs we got while in California to make Dark Chocolate Oatmeal Fig Bars.

Usually on weekends, we usually grab a latte and something delicious for brunch and then sit around and talk. With our busy schedules, it isn’t always as easy to make it to the coffee shop so I am so excited about the new Starbucks® Caffé Latte K-Cup® pods that are available in vanilla, caramel or mocha.

  • Small mixing bowl

Ingredients
  • 1 stick Butter softened
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 cup All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1 tsp Salt
  • 1 cup Old Fashioned Oats
  • 20 dried Golden Figs finely chopped
  • 1 cup Dark Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees. Line a 9×9 square baking pan with parchment paper allowing the extra to hang over the sides. Set aside.

  2. In a small bowl, mix together flour, baking soda, baking powder and salt. Stir to combine.

  3. In the bowl of a stand mixer, cream together butter and both sugars until light and fluffy. Mix in egg and vanilla extract. Reduce the mixer speed to low and, working in batches, add in flour mixture. Fold in oats, figs and chocolate chips.

  4. Spread mixture into baking pan. Bake for 25 minutes or until lightly browned. Remove from oven and let cool before cutting into squares.

    I haven’t tried to latte pods yet, but I will. Your fig bars look delicious and I know they will pair perfectly with a latte. I need to look for those pods!
