This Crockpot beef tips recipe is an easy weeknight meal featuring tender beef tips in a luscious mushroom gravy. It is perfect comfort food for fall and winter nights.

These Crockpot beef tips and gravy are incredibly easy to make, with the slow cooker doing most of the work.ย  This dish is perfect served with mashed potatoes, rice or pasta to soak up that delicious beef gravy.

  • Oil: Use your preferred frying oil.ย  You can use a mix of butter and oil but I do not recommend using only butter to sear the beef because the butter will easily burn.
  • Beef Stew Meat: Use a cut of beef that is suitable for slow cooking, such as a chuck roast sliced into cubes.
  • Beef Stock: The beef stock could be substituted with chicken or vegetable stock, however beef stock will give the best rich beef flavor.
  • Mushrooms: Cremini mushrooms will give this dish the most unami flavor but you can use your preferred variety of white or brown mushrooms.
  • Onion: Use a yellow or white onion.
  • Worcestershire Sauce: Itโ€™s highly recommended to add the Worcestershire sauce to this dish, as it adds a delicious flavor boost.
  • Onion Powder: Since there is onion in the dish, you can omit this if preferred. However it adds a subtle flavor boost.
  • Garlic Powder: The garlic powder could be substituted with 3 finely chopped garlic cloves.
  • Dried Thyme Leaves: The dried thyme leaves could be substituted with 2 teaspoons of fresh thyme leaves.
  • Salt and pepper
  • Cornstarch: The cornstarch is used to thicken the sauce.
  • Fresh parsley: The fresh parsley is used to garnish the cooked beef, and can be omitted if preferred.

You will need a large skillet (cast iron is great for this) and a slow cooker. A traditional Crockpot works great here but a multi-function slow cooker with a sear function would also be great and you can sear the beef directly in the slow cooker.

How to Make Slow Cooker Beef Tips and Gravy

  1. Sear the beef tips. Searing the beef pieces before adding to the slow cooker is not an essential step, however it adds a delicious flavor to the dish.ย  Donโ€™t cook the beef all the way through at this stage, simply sear the outside until browned then remove from the heat.
  2. Combine the beef, vegetables, and seasonings in the slow cooker.
  3. Add the beef stock and stir to combine.
  4. Let the Crockpot do its thing.

5. Make a cornstarch slurry and add to the crockpot.
6. Stir the cornstarch mixture into the crockpot and cook for additional time to thicken the gravy.

Ingredients

  • 2 tablespoons oil
  • 3 pounds beef stew meat cut into 1 inch pieces
  • 1 1/2 cups beef stock
  • 2 cups sliced mushrooms
  • 1 onion peeled and diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme leaves
  • Salt and pepper to taste
  • 3 tablespoons cornstarch
  • 1/4 cup finely chopped fresh parsley for garnishing (optional)

Instructions

  • Heat oil in large skillet over medium-high heat. Working in batches, sear the beef pieces on all sides. Transfer seared beef to bowl of slow cooker.

  • Add the mushrooms, onion, Worcestershire sauce, onion powder, garlic powder, thyme, salt, and pepper to the bowl of the slow cooker.

  • Add the beef stock to the slow cooker and stir to combine. Cover the Crockpot and cook on high for 4 hours or low for 8 hours.

  • In a small bowl, combine the cornstarch with 3 tablespoons of water. Mix well and then stir into the Crockpot. Continue to cook, uncovered, for 10-15 minutes or until sauce is slightly thickened. Garnish with parsley before serving.

Notes

  • Searing the beef is optional but recommended. If your slow cooker offers a sautรฉ function, you can sear the beef directly in the slow cooker.
  • You can replace the onion powder, garlic powder, and dried thyme with one package of onion soup mix, if preferred. 
  • Store leftover slow cooker beef tips and gravy in an airtight container in the refrigerator for up to 2 days. Reheat thoroughly on the stove or in the microwave.

    Tested over and over again until it was just right. You will get the best results by searing the beef first but, even if you skip that step, this recipe is a winner.
