Oatmeal scotchies are one of the best Christmas cookies ever! They are super simple to make and filled with the yummy flavors of chocolate chips, butterscotch, and cinnamon!

Easy Christmas cookies are always something I am on the hunt for. I love holiday baking but don’t have a lot of time to commit and, honestly, I’m not that great of a baker. This oatmeal scotchie recipe saves the day as a tasty and easy cookie that will be at the top of your holiday baking list year after year.

I originally made these oatmeal scotchie cookies as a last minute panic baking session for a bake sale I had forgotten that I had committed to. Now, I make several batches throughout the holiday season to give as gift, use in cookie swaps or just to keep around the house.

When making this oatmeal scotchie recipe, be sure to choose a high quality butter because you will definitely be able to taste it in the finished cookie. I typically choose unsalted but I know a lot of people prefer to use salted since that is what is already in their kitchen.

Chocolate Chip Oatmeal Scotchies

Oatmeal scotchies are one of the best Christmas cookies. With this easy recipe, you can make batch after batch.

Ingredients

  • 1 1/4 cups flour unsifted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup butter softened
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups quick oats
  • 6 oz butterscotch morsels
  • 6 oz semi-sweet chocolate ships

Instructions

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper. Set aside.
  • Combine flour, baking soda, salt and cinnamon in a bowl. Set aside.
  • Beat the butter, sugar, and brown sugar until fully combined. Add in eggs and vanilla and mix well.
  • Gradually beat in flour mixture.
  • Stir in oats, chocolate chips, and butterscotch chips. Refrigerate dough for 15-30 minutes.
  • Spoon by rounded tablespoons onto prepared baking sheets. Bake in preheated oven for 7-9 minutes.
  • Remove from oven and let cool on baking sheet for 1-2 minutes. Transfer to wire racks to cool completely.

Notes

  1. Refrigerating the dough is not required but results in a better cookie.
