Back when I did Whole30, I started eating a version of avocado toast almost every day for breakfast. Bacon replaced the bread and I was in heaven. Between doing Whole30 and trying to eat Paleo the rest of the time, we eat a lot of cauliflower rice on our house. I like to do most of our meal prep on Sundays to make getting dinner done much easier during our busy weeknights but cauliflower rice was one of those that I just never could do ahead of time. Cauliflower just plain stinks once you cut it. I saw all over Facebook how Trader Joes had frozen cauliflower rice but none of our local stores EVER seem to have it. So, I decided I would figure out how to freeze cauliflower rice at home so I could still do my meal prep on Sundays but not have my house stink all week.

Name one thing you dread in your weekly routine. For me, going grocery shopping quickly tops the list because of the complete hassle it can entail. Even with a detailed grocery list in hand, I can kiss an hour or more goodbye once I enter the store. We have a new au pair with us now and she is a vegetarian. I wanted to make spinach artichoke lasagna rolls for dinner but realized I was missing some key ingredients. Instead of heading out to the store with both kids in tow during a mild snowstorm, I instead decided to try something new to get the supplies for my recipe.
