Spring Oreo Truffles

It is official. Spring is here!  Well, unless you count the 5 inches of snow we got yesterday.  Then, it looks like Spring is farther away than ever.  To make myself feel better about this ridiculous weather, I decided to dive into pastel colors head first and make spring Oreo truffles!

These truffles are seriously the easiest things to  make but they are so delicious!  You only need a few ingredients and you are on your way to delicious Oreo truffles.  I used birthday Oreos for this batch but you could easily use any flavor/color of Oreos you wanted!

Spring Oreo Truffles

Ingredients

  • 1 package of Oreo cookies
  • 1 8 oz package of cream cheese softened
  • Candy melts in desired colors
  • Sprinkles {optional}

Instructions

  • In a food processor, crush Oreo cookies.
  • Add cream cheese and pulse until cream cheese is blended and a soft dough forms.
  • Spoon rounded tablespoons of dough onto parchment lined baking sheet.
  • Freeze for 15 minutes.
  • Melt candy melts for 30 seconds. Stir. If not completely melted, microwave in 10 second intervals until completely melted.
  • Dip dough balls into candy melts and sit on parchment paper. Top with sprinkles if desired and let candy harden.

See, I told you they were so easy to make!  I found Mathlete popping these in his mouth every time he walked by the plate they were sitting on so I guess they turned out well. I think I will try some original Oreos for my next batch.
