What to Cook Wednesday

It’s time to get our spatulas, pans and measuring cups ready for What to Cook Wednesday!

[The Noshery], [Simple Daily Recipes], [The Kitchn], [Point-Less Meals]

Sunday:  I love comfort food and Sundays are the best days for comfort food in my book.  Comfort food doesn’t get any better than Fontina Polenta Pie with Beef and Mushrooms.

Monday:  Are Mondays hectic in your house?  They certainly are in ours which is why I find that something quick like Black Bean Salad Chicken Quesadillas are perfect for a Monday night meal.

Tuesday:  Typically we do pasta night on Thursdays but I’ve been working a little later than usual on Tuesdays.  Linguine with Cherry Tomatoes is something Mathlete can throw together if I am not home or that I can quickly put together if I make it in the door in time.

Wednesday:  I am simultaneously embracing fall (my favorite season!) and mourning the departing summer season.  I think Summer Squash and Corn Chowder is the perfect food interpretation of that!

Thursday:  Spicy Basil Lemon Shrimp with Couscous is on my list because it will cook quickly but taste oh so good.

Friday:  Burger time.  I’m going to put a different spin on the traditional though and do a Green Chili and Goat Cheese Southwest Burger.

Saturday:  Ever since my recent trip to the land of Swedish furniture, I’ve been craving swedish meatballs!

What to Cook Wednesday

It’s that time again!  On the heels of my Meal Swap, I had a little trouble getting motivated to check out other recipes because I know I have so much delicious stuff in my freezer to try out.  Then, I came across something that will me a ton of money and make Mathlete ecstatic.  That one recipes spurred me into action for What to Cook Wednesday!

So, let’s get started because you gotta eat, right?

Sunday:  I mentioned up there that I stumbled on a major find while cruising the interwebs checking out recipes.  You see…I’m a Pho addict (no, not one who buys a bunch of fake stuff…that is faux addict).  I cannot get enough of that yummy Vietnamese soup.  I make an attempt to drag Mathlete there (or get take out) at least once per week.  It doesn’t help Mathlete much in his fight not to eat Pho every day that H loves it too.  Yep, I have turned my 4 year old into an addict…Pho style.  My interweb find? Slow Cooker Pho Ga.  You’re welcome, Mathlete 😉

Monday:  The farmers market has been full of gorgeous fruits and vegetables each Saturday.  I’ve been picking up zucchini recently because Baby E really likes it.  I think I’ll put it to use for the adults too by combining it with bacon for a Zucchini Bacon Pie.

Tuesday: It is August and for this area that means it is ridiculously H.O.T.  I think Barley Salad for dinner is a great light meal that will also be filling.

Wednesday:  Got leftover bacon? Check!  I’ll throw it in some Bacon and Egg Sandwiches and do breakfast for dinner!

Thursday:  I’m going to take advantage of more farmers market finds and throw some veggies in to make Pasta with Red Bell Pepper and Zucchini.

Friday: It’s the weekend! Margaritas and Salsa Verde Enchiladas (courtesy of the meal swap) for us!

Saturday:  Chili Rubbed Steaks with Homemade Pico de Gallo sound like a great way to celebrate summer with the grill.  Plus, with the market being on Saturday mornings, I can pick up some extra fresh ingredients for the pico de gallo!

What to Cook Wednesday

Do you ever feel like you are buried under a never ending mound of dishes?  Right now, I do!  Mathlete is our resident dishwasher (well, in addition to the actual mechanical dishwasher) and he is working…A LOT!  That leaves him little time to get to the dishes and so they pile up quickly.  I try my best to help out but it seems like we are always a load or two behind our actual dish usage.  So, to ease the dish washing pain, I went in search of some one-pot meals to make.

Sunday:  This Lemon Braised Chicken and Beans with Mint Pesto takes awhile but it sounds so delicious and summer-like!
Monday: I’m down for just about anything curry so I am anxious to try Thai Red Beef Curry.
Tuesday:  Parmesan Chicken and Rice comes together very quickly and easily! Just make sure to use a good quality parmesan because you can definitely taste the difference.
Wednesday:  Another curry dish on the menu (hope Mathlete doesn’t mind!) but this time with chicken and coconut!

Thursday:  During my die hard Food Network TV phase, I fell in love with Giada’s Lemon Spaghetti because it is so easy and tastes so fresh.
Friday: Pork chops cook quickly and this recipe for Pork Chops with Green Peppercorn Sauce offers the added benefit of only needed one pot!

Saturday:  I’ll probably swap out the golden raisins for something else in this Chicken and Chickpea Pilaf but it looks so delicious!

  1. The lemon spaghetti really is wonderful! It is so quick to make that it is my fall back when an evening gets hectic.
