Weekly Menu Plan

So, I am totally not going to lie.   This weekly menu plan almost didn’t happen.  I’m having surgery tomorrow followed by a few weeks on crutches.  Knowing that I won’t be up for making dinner for a few days {at least} made it hard for me to focus on preparing a menu.  The reality in our house for a week or so will probably be frozen pizza and take out.

BUT, you {hopefully} aren’t having a surgery which means you probably still want some delicious food to cook/eat.  So, I give you What to Cook Wednesday…

Sunday:  How about we start off our week with a trip to the grill?  I am thinking Vietnamese grilled pork chops sounds like a delicious way to spend a Sunday evening.

Monday:  We’re going meatless and chilled this week!  Chilled avocado soup just sounds like such a fabulous way to beat the heat on a really hot summer day.

Tuesday:  You can almost never go wrong with putting down a plate of nachos to eat.  For a slightly different take, let’s make those chicken ranch nachos.

Wednesday:  Hump day is always better if you finish it off with a delicious meal.  Pan seared Greek steak rolls are the perfect combination of steak and vegetables so you can feel good about your wonderful mid-week meal.

Thursday:  I love using different pasta shapes for our pasta night meals.  This week, we’re taking orecchiette a spin and adding caramelized onion, red pepper and rosemary.

Friday:  We’re taking a different approach to our typical Mexican Friday night by making Mexican quinoa with “lazy” guacamole.

Saturday:  We’ll finish off our week with some good old fashioned pulled pork sandwiches.  Of course, we never go plain so these have some pickled vegetables on top to make them extra delicious.

Ok, what is your on your menu this week?  Any recommendations for some delicious take out choices?
