Tomato Corn Pasta Salad

With the gorgeous weather now here, we are spending lots of time outdoors at picnics, BBQs, and other outdoor parties. These events are the perfect time to enjoy delicious recipes, like bacon corn pasta salad, that take advantage of fresh produce and seafood. 

Shrimp, Tomato and Corn Pasta Salad

Fresh From Florida and the Florida Department of Agriculture guarantees fresh and delicious food that makes every recipe a win. I like choosing ingredients that come Fresh from Florida because I prefer to buy as locally as possible. Seasonal ingredients grown in Florida include blueberries, tomatoes, sweet corn, watermelon and seafood which are some of our favorite things to eat during the warm weather months. These ingredients are perfect for using in summer recipes like these:

One of our favorite ways to use fresh produce and seafood is in picnic friendly pasta salads. This one combines fresh corn, tomatoes and shrimp with a delicious herb and oil dressing.

Tomato Corn Pasta Salad Ingredients:

16 oz penne pasta
4 ears sweet corn
1 pint tomatoes, halved
3/4 lb cooked shrimp, peeled
Dressing:
1 tsp dry mustard
1/4 cup white wine vinegar
1/4 cup extra virgin olive oil
3 tsp oregano, finely chopped
2 tsp dried basil

Let’s Make It:

1. Cook pasta according to package directions for al dente. Drain and set aside to cool.

2. Cook corn and remove kernels from ears of corn. In a large bowl, combine cooled pasta, corn kernels, tomatoes and cooked shrimp. 

3. In a small bowl, whisk together mustard, vinegar, oil, oregano and basil until fully combined. Toss with pasta salad. Refrigerate until ready to eat.

This pasta salad is so perfect for lunches or any kind of outdoor event you may be going to over the course of the summer. The herb dressing is the perfect addition to all the fresh flavors of the corn, tomatoes and shrimp that are Fresh from Florida.

Ingredients
