Chicken Fajita Chopped Salad

When the temperature consistently hit eighty degrees or higher, I crave salads for lunch and dinner. There is something about a crisp, cool salad that just instantly refreshes me even on the hottest of days. My current favorite is a chicken fajita chopped salad that is packed with fresh lettuce, seasoned chicken and more fresh vegetables.

When I am putting together my salad, I focus on the best produce and ingredients I can find because I want everything to taste amazing. Instead of hitting the dressing aisle where I’ll find room temperature dressing that will put a damper on my crisp, fresh vegetables, I hit the refrigerator section in the produce aisle to get Litehouse dressings. Litehouse Homestyle Ranch and Chunky Bleu Cheese dressings are my absolute favorite for topping my salads. The Homestyle Ranch goes perfectly on my chicken fajita chopped salad. 

Chicken Fajita Chopped Salad Ingredients:

2 boneless, skinless chicken breast
2 tsp fajita seasoning
3 Tbsp oil, divided
3 cups chopped lettuce
1/2 cup black beans, rinsed and drained
1 yellow pepper, diced
1 red onion, diced
3 Tbsp fresh cilantro, finely chopped
1 cup grape tomatoes, quartered
1 avocado, diced
2 tortillas
2/3 cup Litehouse Homestyle Ranch dressing

Let’s Make It:

Preheat oven to 400 degrees. Lightly brush both sides of tortillas with 1 Tbsp oil. Cut into strips and put onto rimmed baking sheet. Bake for 10 minutes or until crisp. Let cool.

Heat 2 Tbsp oil in large skillet over medium heat. Season chicken with fajita seasoning. Cook 5-7 minutes on each side or until done. Let cool for 5 minutes and then dice. 

In a large bowl, toss together chicken, lettuce, beans, bell pepper, red onion and cilantro. Add dressing and toss to combine. Add avocado and cooled tortilla strips just before serving.

While I am prepping my salad, you may find me sneaking little dips into the dressing with fresh pepper strips. It makes a great snack while I get the recipe completed.

When I shop for salad ingredients, I love being able to find my dressing right there among all of my fresh fruits and vegetables. Litehouse dressings are always found refrigerated in the produce section of the grocery store making my shopping trip super easy in addition to making sure my salad it totally delicious.
