Smoked Salmon Toasts

This smoked salmon toast is the perfect option for busy weekdays or lazy Sunday mornings when you want a delicious breakfast that is also on the healthier side.

I have been trying to cut down on eating bread recently and so I’ve been looking at all kinds of toast replacement options. One of my current favorites is roasted sweet potato slices which are perfect in this smoked salmon toast recipe.

What is a sweet potato toast?

A sweet potato toast uses sliced, roasted sweet potatoes instead of bread. I make my own sliced sweet potatoes and use them through the week. They are perfect for creating a savory breakfast toast. There are also several options available in the freezer section of the grocery store that let you skip the roasting portion and save some time. 

Sweet potatoes are an excellent source of vitamin A and C, a good source of fiber and vitamin B6, and satisfies any gluten-free, vegan, or paleo dietary needs.

Ingredients for Smoked Salmon Breakfast Toast

  • Sweet Potatoes – You can use fresh sweet potatoes and roast them yourself. Or, check your freezer aisle for an option where the work is already done for you.
  • Fresh Ricotta Cheese – I love fresh ricotta in this recipe but you can also replace it with cream cheese or cottage cheese.
  • Smoked Salmon – You’ll want thinly sliced smoked salmon for this recipe.
  • Toppings – I use chopped red onion, capers, and everything bagel seasoning. You can add avocado slices, chopped fresh dill, chopped hard boiled egg, a poached egg…really the options are pretty endless.

What is the best type of smoked salmon for this recipe?

You’ll want to look for smoked salmon that has been cured and cold smoked. This version is usually referred to as Nova salmon or lox. It also should be thinly sliced. Thicker sliced salmon “steaks” are typically hot smoked and aren’t the right choice for this recipe. You can also usually spot the hot smoked salmon because it has a thick skin over the top.

This healthy smoked salmon toast is perfect for breakfast for any day. It also makes a great brunch option. Grab lots of different topping options and let everyone personalize their own toast. I’ve also been known to throw one of these together for lunch too.

Ingredients

Sweet Potato Toast

  • 1 medium sized sweet potato peeled and sliced into 1/4-1/2 inch thick slices
  • 2 Tablespoons olive oil
  • Salt and Pepper

Smoked Salmon Toast

  • 1/4 cup fresh ricotta
  • 1/2 pound cold smoked salmon Lox or Nova
  • 1/4 cup thinly sliced red onion
  • 3 Tablespoons capers drained
  • 2 Tablespoons everything bagel seasoning

Instructions

Sweet Potatoes

  • For the sweet potatoes: Preheat oven to 400 degrees. Brush each side of the sweet potato slices lightly with oil and place onto baking sheet. Season with salt and pepper. Bake in preheated oven for 30 minutes or until cooked through. (Check thinner slices at the 20 minute mark.) Remove from oven and let cool slightly.
    1 medium sized sweet potato, 2 Tablespoons olive oil, Salt and Pepper

For the Toast

  • Spread ricotta cheese onto six cooked sweet potato slices. Top each with smoked salmon, slivered red onions, capers, and everything bagel seasoning. Serve immediately.
    1/4 cup fresh ricotta, 1/2 pound cold smoked salmon, 1/4 cup thinly sliced red onion, 3 Tablespoons capers, 2 Tablespoons everything bagel seasoning

Notes

  • Sweet potato toasts can be made ahead of time and kept in the refrigerator for up to one week.
  • If you are using premade sweet potatoes toasts from the grocery store, follow the instructions on the bag for cooking in place of step 1.
  • Ricotta cheese can be replaced with cream cheese or cottage cheese.
