Shannah’s Test Kitchen: Relished Cashew Chicken Stir Fry

So, this month’s test kitchen post is a little different.  You see, the last two months have been absolutely insane around here. I traved in April and May on top of all my regular to do stuff so things just got a little out of hand.  So, not much actual cooking was happening in Casa de Co.

As I unpacked everything, I was a little surprised that all of the meat and veggies were uncut or prepped in any way.  This isn’t a criticism because I love prepping my own vegetables but I do want to bring it up in case you were expecting everything to be prepared when you opened the package. I did a quick chop on all the vegetables and chicken and then got to cooking.

So, how was it? 

The stir fry was delicious.  All of the ingredients supplied were super fresh and I liked that it didn’t have a super heavy sauce with it.
