Raspberry Crumb Bars

May 1, 2016 By Shannah Coe 13 Comments

Raspberry Crumb Bars are an amazing dessert that you have try out! These raspberry bars are perfect, because they’re not too sweet and have a delicious fruit layer that goes great with the butter crumbs on top! Your kids will love giving you a hand to make these easy Raspberry Crumb Bars!

My daughter has recently gotten really excited about being the kitchen! It makes me so happy that she is developing a love of cooking and baking and that it is something we can do together. Of course, she much prefers baking to cooking so our most recent recipe was for Raspberry Crumb Bars.

Raspberry Crumb Bars

Now, the thought of letting an 8 year old measure out flour and sugar tends to give my Type A self a little bit of a hive breakout because I start thinking about the mess we have to clean up.

If you have ever tried to teach a young child how to properly measure flour, you know that it frequently ends with flour everywhere. We have hardwood floors in our kitchen which can make it especially difficult to clean up.

But, now that I have my BISSELL PowerForce Helix vacuum, I know that I can easily clean up what ever mess gets made while we are in the kitchen. It came the day before we planned to bake so I was excited to try it out on our inevitable large mess.

It has super powerful suction and a large cup so I don’t have to empty it as often. I especially love the crevice tool because it makes getting corners clean so easy.

The filter easily removes for cleaning too which is awesome.

And I don’t have to worry about how large of a mess we make anywhere because the BISSELL PowerForce Helix vacuum comes with an extra large cup {it is bagless so there is never any messing around changing bags} so I can move from kitchen to family room to stairs without having to empty it. The vacuum even picks up stuff you don’t realize may be on your floor which you get to see when you empty the cup!

As expected, making the raspberry crumb bars were a little messy but it was totally worth it since they are so delicious. Plus, I got to test out my new BISSELL PowerForce Helix vacuum after we were done. H even wanted to try out the crevice tool ๐Ÿ™‚

Ingredients for Raspberry Crumb Bars:

1/2 cup sugar
1/2 tsp baking powder
1 1/2 cups flour
1/2 tsp salt
8 Tbsp butter, cut into pieces
1 egg, lightly beaten
Raspberry Layer:
2 pints fresh raspberries, roughly chopped
1/3 cup sugar
2 tsp cornstarch

Let’s Make It:

Preheat oven to 375 degrees. Line an 8×8 baking dish with parchment paper or spray with baking spray and lightly flour.

In a large bowl, mix together 1/2 cup sugar, baking soda, flour and salt. Stir in egg. Cut in butter using fork or pastry blender until small crumbs formed. Press half of dough into bottom of prepared baking sheet.

In a medium bowl, combine raspberries, 1/3 cup sugar and cornstarch. Stir well. Pour over crust in baking sheet. Top with remaining dough.

Bake in preheated oven for 35 to 40 minutes or until lightly golden brown. Cool completely before cutting.

Yum! This recipe looks awesome! I will definitely be pinning and trying it. As far as cleaning goes, with two kids under the age of four my floors are always a crumby, sticky mess. It is a never ending battle! ๐Ÿ˜‰
