Pumpkin Iced Ginger Snaps

Bake sales are my weakness.  I love going to bake sales and seeing all the delicious things people have made.  Being on the baking side of the bake sale though, definitely my weakness in a whole ‘nother way.  So, I set out to create a bake sale worthy item that even a non-baker could throw together and make it a best seller.  My quest led me to Pumpkin Iced Ginger Snaps.

These cookies use a store bought ginger snap base {because hey…we’re non-bakers here} but look just as homemade and delicious as any other treat made from scratch.  Their store bought origins will be our secret.


What You’ll Need:
Pumpkin Cream Cheese Icing
Ginger Snap Cookies
Candy Corn

Let’s Make It {this could get complicated so be warned ๐Ÿ˜‰ }
1)  Place your ginger snaps on plate or any desired serving dish.

2)  Put the icing into a frosting bag {or ziploc with the corner cut off in my case} and pipe frosting onto the top of each cookie.  Get fancy with it if you want or just do little circles.  I had 6 year old help so fancy was not part of our mission…keeping frosting off our clothes and walls was.

Yeah, that is almost so easy that I didn’t even numbers for it.  I just didn’t want anyone to get lost in the steps though.  Now that I’ve shared my secret of bake sale desserts, what is your favorite bake sale item?

  1. This is exactly my kind of cooking….which is to say no cooking at all (because I’m a disaster in the kitchen) and in the end you have cookies and candy. Genius.

  4. I bet the flavor combination of ginger snaps and cream cheese is out of this world! I love the ease of these cookies! I love to bake, but usually end up giving the cookies or whatever to the neighbors, these could be made in small batches! Just perfect!

    1. I love the spices in ginger snaps and think they match so well with the cream cheese. Being able to throw together something like this quickly is great for unexpected visitors too!
