This one pot Irish stew recipe is a blend of tender meat, carrots and potatoes, all simmered to perfection in a savory and flavorful broth. On a cold, winter night, this is the perfect bowl of comfort food.

This stew is so easy and is the perfect way to add a little Irish flair to your March even if you aren’t planning on celebrating St. Patrick’s Day. We serve ours with Irish colcannon and it is so good.

One Pot Irish Stew Ingredients
Potatoes: Yellow potatoes, red potatoes, or Russet potatoes all work well here.
Carrots: You’ll want these cut into larger pieces so they don’t become mushy during cooking.
Onion: Go with a yellow onion here.
Butter: I have also made this with ghee (clarified butter) with success too.
Stew Beef: I buy my beef already cut into pieces but still go through and make sure most of the pieces are 1 to 1 1/2 inches in size.
Garlic
Beef Broth: For added flavor, you can use beef stock here which is usually has a more concentrated beef flavor.
Red Wine: Go with a Cabernet Sauvignon or similar style for the best results.
Guinness: It can’t be an Irish stew recipe without beer.
Tomato Paste
Worcestershire Sauce
Herbs, Spices, and Seasonings: You’ll need dried thyme, dried rosemary, bay leaves, salt, and pepper.
How to Make Irish Beef Stew
- Start by preheating your oven as some of the cooking is done in the oven. Be sure to select an oven safe pot for the first part of the recipe so you can easily transition it to baking.
- Pat the stew beef pieces dry with a paper towel to help get the extra moisture out. This helps them brown better. Season with salt and pepper and then brown them. Depending on the size of your pot, you may need to work in batches so you don’t overcrowd the pot. Overcrowding would leave to steamed beef versus browned pieces.
- Deglaze the pan with some of the beef broth so you can get all the extra flavor from the bits on the bottom from browning the beef.
- Add in your herbs, tomato paste, and Worcestershire.
- Then, add the beef and remaining ingredients into the pot and transfer to the oven to finish cooking.

You could easily make this in the slow cooker versus in the oven. Just put it on low for 6-8 hours. I do that if I won’t be home to let it cook in the oven for a few hours. Even if your family isn’t big into Irish food, I guarantee they are going to love this!

One Pot Irish Stew
Ingredients
- 2 pounds potatoes peeled and cut into 1/2 inch pieces
- 4 carrots peeled, cut into 1/2-inch pieces
- 1 cup onion roughly chopped
- 2 Tablespoons ghee or butter
- 2 pounds stew beef cut into 1-inch pieces
- 3 garlic cloves minced
- 1 1/2 cups beef broth
- 1 cup red wine
- 1 bottle Guinness
- 2 Tablespoons tomato paste
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- salt and pepper to taste
Instructions
- Preheat oven to 275 degrees.
- Pat the stew beef pieces dry with a paper towel. Season with salt and pepper.
- In a large, oven safe pot with a lid, heat ghee or butter over medium heat. Working in batches if necessary so that the pan doesn't get overcrowded, brown the beef pieces. Remove all beef pieces and set aside. Add garlic and cook for one minute.
- Add garlic and cook for one minute.
- Stir in ½ cup of beef broth, scraping the pan to remove bits from the bottom. Bring to a simmer and add thyme, rosemary and bay leaves. Stir in tomato paste and Worcestershire sauce.
- Add browned beef, vegetables, remaining beef broth, red wine and Guinness to the pot. Cover and transfer to preheated oven. Cook in oven for 2 hours.
Notes
- For the crockpot, brown the beef and then transfer everything to the crockpot. Cook on low for 6-8 hours.
