2poundspotatoespeeled and cut into 1/2 inch pieces
4carrotspeeled, cut into 1/2-inch pieces
1cuponionroughly chopped
2Tablespoonsghee or butter
2poundsstew beefcut into 1-inch pieces
3garlic clovesminced
1 1/2cupsbeef broth
1cupred wine
1bottle Guinness
2Tablespoonstomato paste
1TablespoonWorcestershire sauce
1teaspoondried thyme
1teaspoondried rosemary
2bay leaves

Instructions
Preheat oven to 275 degrees.
Pat the stew beef pieces dry with a paper towel. Season with salt and pepper.
In a large, oven safe pot with a lid, heat ghee or butter over medium heat. Working in batches if necessary so that the pan doesn't get overcrowded, brown the beef pieces. Remove all beef pieces and set aside. Add garlic and cook for one minute.

Stir in ½ cup of beef broth, scraping the pan to remove bits from the bottom. Bring to a simmer and add thyme, rosemary and bay leaves. Stir in tomato paste and Worcestershire sauce.
Add browned beef, vegetables, remaining beef broth, red wine and Guinness to the pot. Cover and transfer to preheated oven. Cook in oven for 2 hours.
Notes
For the crockpot, brown the beef and then transfer everything to the crockpot. Cook on low for 6-8 hours.
