One Pot Chicken Enchilada Pasta

I think every family has a go to food that they make over and over because everyone loves it. In our household, that is pasta! While I may prefer something like a butternut squash and sage pasta and Mathlete likes the sausauge and pepper version, we can all agree that pasta is what we want for dinner. Plus, pasta cooks fast making weeknight meals way easier to actually get on the table on time. How about we make it EVEN easier though by making a one pot chicken enchilada pasta?

Anything I can make in only one pot is winner for me. This pasta looks amazing.

Now, with most one pot wonders, you just toss all your ingredients in and let it cook. I am super weird about chicken though so I did put my chicken in first and give a few minutes in the pot on medium before adding the other items. Totally your choice if you do the same!

What You’ll Need:

1 16 ounce box rotini
2 cups frozen corn
1 red pepper, sliced
1 onion, sliced
1 can diced tomatoes with juices
1 cup diced chicken breast
1 package taco seasoning
1 tsp salt
2 tsp oil
4 cups chicken broth
1/4 cup cilantro

Let’s Make It:

1) Add the oil to the pan and heat over medium heat. Add the chicken and cook for 4-5 minutes.

2) Add all remaining ingredients to the pot and bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Serve topped with shredded cheese and green onions if desired.

This is our new weeknight favorite! We love the chicken enchilada flavor in a pasta dish. All the flavors of an enchilada in an easy to make pasta dish...I call that a win win for sure.
This is one of those recipes that I know you will make again and again because it is sure to be an instant family favorite. Plus, who doesn’t love any meal where there is only one pot to clean up?!

Ingredients
  1. 1 16 ounce box rotini
