Macaroni and BBQ Chicken Pizza – Budget Friendly Meals

So, I am going to give you a second to digest the title of this post. I’m sure, at first, it seems a little odd. Well, this Macaroni and BBQ Chicken pizza came about on a day when I wanted to use food we already so I a) didn’t have to make a trip to the store and b) didn’t have to spend any additional money on food since I had already spent our food budget for the week/month {I know the 1st and 15th can be particularly sticky times of the month for most people’s budgets}. I called out to the fam and asked “what do you want for dinner?” The response was: BBQ chicken, pizza and macaroni and cheese. So, I decided to put them all together and this crazy but so delicious pizza was made. Using what I had and focusing on low cost ingredients made this truly one of my budget recipes.

This pizza may look a little crazy but it combines the best of every meal into one delicious pizza.

Ingredients for Macaroni and BBQ Chicken Pizza:

One large pizza crust
2 boneless, skinless chicken breasts
1 cup Kraft BBQ sauce
1 box Velveeta Shells & Cheese
1 cup mozzarella cheese

Let’s Make It:

1) Season your chicken breast with salt and pepper. Cook the chicken any way you choose and then shred. Toss with 1 cup of BBQ sauce. {Alternatively, you can use a Rotisserie chicken and just shred it.}

2) Prepare Velveeta Shells & Cheese according to the package directions.

3) Preheat oven to 425 degrees. 

4) Spoon Shells & Cheese on top of pizza crust. Top with BBQ chicken. Sprinkle mozzarella cheese over top of the chicken. Bake for 15 minutes or until cheese is melted.
