Fudgy Rolo Brownies

No matter what kind of day you have had, there is nothing better than a warm, gooey brownie. My current favorite are these rolo brownies which have the perfect amount of drool worthy caramel mixed in with traditional fudgy brownies.

Fudgy Rolo Brownies

The awesome thing about these brownies is that, if you are in a time crunch, you can easily use your favorite boxed mix. I share the from scratch recipe below but feel free to substitute any boxed brownie mix if you prefer. The key is to make sure you have plenty of rolo candies to go in the batter!

Ingredients for Fudgy Rolo Brownies:

1 1/2 cup sugar
3/4 cup flour
1/2 cup cocoa powder
1/4 tsp salt
1/3 tsp baking powder
3 eggs
3/4 cup oil
1 1/2 tsp vanilla extract
20 rolo candies, unwrapped

Let’s Make It:

1. Preheat oven to 350 degrees. Lightly spray a 9×9 baking pan with nonstick cooking spray. Set aside.

2. In a medium bowl, combine sugar, flour, cocoa powder, salt and baking powder.

3. In a large mixing bowl, whisk together eggs, oil and vanilla extract. Stir in sugar mixture and mix until just combined. 

4. Pour 2/3 of batter in prepared pan. Top with Rolo candies. Top with remaining 1/3 batter. 

5. Bake in preheated oven for 25-30 minutes. Let cool completely before cutting.

If you love caramel and chocolate together, these Fudgy Rolo brownies are sure to be a winner. You could even toss a few extra Rolos into your baking dish for some extra caramel if you want.
