Dark Chocolate Cranberry Baked Oatmeal

One of our favorite breakfast items is Dark Chocolate Cranberry Baked Oatmeal! I am a firm believer that how you start the day makes all the difference in how your day will go. Start with a hearty breakfast and you’ll stay full and focused throughout the entire day making the day just all around more productive.

I try to make my kids understand that starting the day with a big glass of milk and a delicious breakfast will make all the difference each and every day. 

This oatmeal casserole with fruit is so hearty and delicious but also offers a hint of sweetness from the chocolate. That gets my kids excited because they think they are also getting a sweet treat with their breakfast.

Easy Dark Chocolate Cranberry Baked Oatmeal

We started our day out with the best baked oatmeal and a delicious glass of DairyPure brand milk. Then, we focused on the plans for the day: Easter fun creating Peep brownies.

Easy Dark Chocolate Cranberry Baked Oatmeal Recipe

The brownies were super simple to make and the kids had fun hiding the Peeps inside of the brownie batter. Then, of course, we decorated the brownies with icing and more Peeps.

Ingredients
  • 3 cups Old Fashioned Oats
  • 1.5 cup Brown Sugar
  • 5.5 cups DairyPure Brand Milk
  • 1/2 cup Almond Butter
  • 3 Eggs beaten
  • 1.5 cups Dried Cranberries
  • 1 cup Dark Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish with nonstick cooking spray. Set aside.

  2. In a large pot, combine oats, DairyPure brand milk, almond butter, brown sugar and eggs. Stir well. 

  3. Bring to boil over medium heat and then reduce to a simmer. Simmer for 20 minutes, stirring occasionally, until thickened. Remove from heat and stir in cranberries.

  4. Pour oatmeal into prepared baking dish. Top with dark chocolate chips. Bake at 350 degrees for 30 minutes or until set.
