Copycat Rigatoni D

Ok, confession time: I love pasta.  Really, who doesn’t?!  I mean it is so versatile and can be paired with just about everything for an amazing dish.
One of my favorite pasta dishes is from Maggiano’s {our local Italian place does a version that is really close as well} and it is called Rigatoni D.  It is full of mushrooms and chicken and just so delicious.  We’re trying to eat out a lot less so I decided to try and create a copycat of the recipe so we can enjoy it anytime we want at home.  I think my copycat Rigatoni D comes pretty close to the original so I am excited to have it whenever I want now.

One of main keys to this recipe is the mushrooms.  They are simmered in delicious balsamic vinegar to create a super deep flavor.

Servings: 6
Ingredients
  • 1/4 cup balsamic vinegar
  • 1 cup button mushrooms quartered
  • 1/2 cup sweet onion diced
  • 3 garlic cloves minced
  • 2 cups chicken broth
  • 2 Tbsp cornstarch
  • 2 cups rigatoni pasta
  • 3 chicken breast
  • 4 Tbsp butter
  • 1/2 cup dry white wine
  • 2/3 cup Marsala
  • 2 cups heavy cream
  • 1 Tbsp salt
  • 2 Tbsp basil chopped
  • 1/2 cup grated Parmesan
Instructions
  1. Spray a large pan with nonstick cooking spray. Add mushrooms, garlic and onion to the pan and saute until they begin to soften. Add balsamic vinegar and cook until the vinegar has evaporated. Set aside.
  2. In a small bowl, combine the chicken broth and cornstarch. Set aside.
  3. Heat butter in pan and add chicken. Cook, turning over after about 7 minutes, until done. Add white wine and reduce completely.
  4. Add Marsala and simmer until reduced by half. Whisk chicken broth mixture and then add to the pan. Bring to a simmer. Add heavy cream, salt, pepper and mushroom mixture. Simmer for 10-15 minutes or until thickened.
  5. While sauce simmers, cook pasta for 6 minutes. Drain. Add pasta to sauce and toss to combine. Cook for an additional 2-3 minutes.
  6. Serve topped with chopped basil and grated Parmesan.

This turned out so close to the original and I am so excited that I can make one of my restaurant favorites at home!  I can even get my daughter to eat it if I take out the mushrooms.

    This looks delicious. I like it when you’re able to recreate a favorite restaurant dish at home. Most times, it’s better than the original.

      I think I could eat pasta almost every day too…although I would need a day for some Mexican food too. Hope you enjoy this!
