Buffalo Chicken Skillet Nachos

Every Saturday during the fall, we settle in for some college football and yummy “football food.” I started making my chips recently and now I make them almost every weekend. This past weekend, we used them to create Buffalo Chicken Skillet Nachos for the ultimate combination of classic football food.

One of the reasons I started making my own chips is because I realized a) how easy they are to make and b) I could control what went in and on them. I feel the same way about chicken, so I am super excited to share with you that Tyson Foods, Inc. carries Tyson® chicken products that are raised with no antibiotics ever. These specially marked Tyson chicken products (including nuggets, strips, Any’tizers® snacks, and drumsticks), in addition to being raised with no antibiotics ever, are made with the long-standing dedication to quality with 100% all natural ingredients (no artificial ingredients and minimally processed).

For my Buffalo Chicken Skillet Nachos, I use either the Tyson® Any’tizers® popcorn chicken or the Tyson frozen pulled chicken. Both come with the No Antibiotics Ever label, so I know they are a great choice for my family. You can also use the Tyson fresh chicken and cook it any way you choose, but make sure to look for the “No Antibiotics Ever” label when shopping.

Ingredients for Buffalo Chicken Skillet Nachos:

4 cups tortilla chips
1 ½ cups Tyson pulled chicken OR 2 cups Tyson® Any’tizers popcorn chicken, cooked per package instructions
½ cup buffalo wing sauce
½ cup shredded pepper jack cheese
½ cup shredded double cheddar cheese
¼ cup ranch dressing
2 Tbsp chopped cilantro

Let’s Make It:

1. Preheat oven to 400 degrees.

2. In a medium bowl, combine chicken with 1/3 cup buffalo wing sauce. (If using popcorn chicken, I recommend cutting the pieces in half.)

3. Layer 1/3 of chips in bottom of large cast iron skillet. Top with ½ of chicken. Sprinkle with ½ of pepperjack cheese. Repeat with another layer of chips, chicken and pepperjack cheese. Top with remaining 1/3 of chips. Sprinkle double cheddar cheese on top of chips.

4. Bake in preheated oven for 10-15 minutes or until cheese is melted. Remove from oven and top with remaining buffalo wing sauce, ranch dressing and chopped cilantro.
