Bacon and Cheese Waffles

Everyone in the house will wake up and rush to the table when you serve Bacon and Cheese Waffles that are topped in a yummy Swiss cheese sauce! The perfect waffle recipe to serve for breakfast or brunch! Bacon and Cheese Waffles are super simple to make, making the waffle batter will take 10 minutes or less!

Have you heard? Mother’s Day is this Sunday. If you are a mom, I am sure there is no way you’ve forgotten. If you aren’t, I am sure you have been bombarded with reminders from just about everywhere.

So, instead of talking about Mother’s Day, let’s talk about something everyone will love: Bacon and Cheese Waffles. Yes…waffles with bacon and cheese. Oh, and did I mention topped with a cheese sauce?!

Bacon and Cheese Waffles

So, these waffles would totally make an awesome breakfast in bed for Mother’s Day. Or, you could just make them any day of the week and watch them bring smiles to everyone’s face at the table.

I use a combination of Swiss cheese and pepper jack cheese. You can easily change this to your favorite cheeses though. Just don’t touch the bacon…waffles need bacon.

Ingredients for Bacon and Cheese Waffles:

2 cups all purpose flour
1 tsp baking powder
1 tsp salt
1/2 tsp dry mustard powder
1/2 tsp sage
4 Tbsp butter, melted
1 large egg
1 3/4 cup milk
8 slices bacon, cooked and crumbled
3/4 cup shredded pepper jack cheese
Cheese Sauce:
2 Tbsp butter
2 Tbsp flour
1 cup milk
1 cup shredded Swiss cheese

Let’s Make It:

1. In a medium bowl, combine flour, baking powder, salt, mustard and sage. Stir to combine.

2. In another bowl, whisk together butter, egg, and milk. Add to dry ingredients and mix just until moistened. Fold in bacon and shredded cheese.

3. Heat waffle iron to medium heat. Spray iron if necessary. Spread batter into iron being careful not overfill. Cook until lightly browned. Repeat until batter is gone.

4. For cheese sauce: Heat 2 Tbsp butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk. Simmer for 5-10 minutes, whisking frequently, until slightly thickened. Stir in Swiss cheese. Serve over hot waffles.

Ingredients
