Make a healthier take on a Tex-Mex favorite with this Chicken Enchilada Stuffed Peppers recipe filled with chicken, beans, vegetables & melted cheese!

 
I was so happy with how this recipe turned out that I wanted to share it here with you all as well.  The idea for this recipe came about because of my husband’s love of enchiladas and my desire to be a little healthier in the way I eat.  Chicken Enchilada Stuffed Pepper
 
We won’t call it clean eating because I am far from perfect when it comes to that. This is really just more a focus on increasing our vegetable intake when possible. I created a Chicken Enchilada Stuffed Peppers recipe by substituting peppers for traditional tortillas in this recipe.
 
This is the best chicken enchilada recipe because it allows me to enjoy these shredded chicken enchiladas without feeling like I am piling on the carbs and calories! This stuffed bell peppers recipe is filled with so much deliciousness but they are pretty healthy too thanks to all of the vegetables!

Chicken Enchilada Stuffed Peppers

Ingredients

  • 1 cup Cooked Shredded Chicken
  • 1/2 cup Black Beans rinsed and drained
  • 1 Zucchini finely chopped
  • 1 Red Pepper finely chopped
  • 1/2 cup Salsa
  • 2/3 cup Green Enchilada Sauce
  • 1 cup Shredded Cheese divided
  • 4 Bell Peppers

Instructions

  • Preheat oven to 375 degrees.
  • Remove the tops and inside membranes from the 4 bell peppers. Place into glass dish upright.
  • In a large bowl, combine the chicken through salsa. Stir well. Stir in 1/2 cup of shredded cheese.
  • Spoon chicken mixture into the bell peppers. Top with remaining 1/2 cup of shredded cheese and 2/3 cup of enchilada sauce.
  • Cover dish with foil and bake at 375 degrees for 15-20 minutes. Remove foil and bake for additional 5 minutes or until cheese is melted.

Notes

  • A rotisserie chicken is a great option to use!
  • I love using salsa verde for this recipe!

  • 1 cup cooked shredded chicken {a rotisserie chicken works great here!}
  • 1/2 cup black beans rinsed and drained
  • 1 zucchini finely chopped

  • 2/3 cup green enchilada sauce
  • 1 cup shredded cheese divided
  • 4 bell peppers

    1. I am not a huge fan of the traditional stuffed pepper either! I love finding new ways to stuff them though.

    I am not a fan of peppers but I would totally make this recipe. I don’t mind the taste of peppers, I just wouldn’t eat the outside. However, my family would love this and your first picture is appetizing enough to make me wants to try the recipe out.

    I have only made so far stuffed peppers with rice and ground beef, but we love vegetables. So this is a recipe I will have to try out because I still have plenty of peppers in the fridge from our garden that I had set aside to stuff before Thanksgiving. Thanks for the recipe!

  8. Great ingredients! My daughter is a vegetarian, so I am always looking for recipes that I can easily adapt for the whole family. This recipe would be easy enough to make for the whole family, meat for us, no meat for her. Great protein for everyone.
