WTCW #51

Can you believe another week has come and gone since our last What to Cook Wednesday?  Time is flying by fast so let’s get our eat on before tomorrow comes!

[Pearls, Handcuffs and Happy Hour], [Two Peas and Their Pod], [The Girl Who Ate Everything], [Smitten Kitchen]

Sunday:  Shrimp are such a fantastic option for Spring/Summer cooking!  Lemon butter shrimp with italian seasoning offers a great small meal or, pair it with pasta for a bigger dinner.

Monday:  Time always gets away from me on Mondays so sandwiches are a perfect option.   We’ll go take a basic favorite to another level and make a parmesan crusted pesto grilled cheese.  Is your mouth watering yet?

Tuesday:  I feel like any meal that comes in the form of a cupcake has to be good!  I guess that is why double decker taco cupcakes immediately caught my eye.

Wednesday:  This bacon and egg risotto combines breakfast and dinner all into one yummy little dish.

Thursday:  Let’s put a little Tex Mex flair into our pasta night and make chicken enchilada pasta.

Friday:  Are you noticing a decidedly Mexican theme this week?  Guess Cinco de Mayo just wasn’t enough for me.  I’ve got shrimp tacos on my mind for the end of the work week.

Saturday:  Lemon garlic rubbed chicken breast sounds like such a fantastic end of the week meal!  I can already see us eating it out on the deck with a glass of wine (YUM!).
