What to Cook Wednesdays…Snack Edition

So, as I mentioned last week (and plenty before that!), we are on vacation this week.  Vacation means two things for our household…road trip + being home most of the day.  These two things means we need a lot of one thing: SNACKS! 

 
Sunday: I love these Roasted Chickpeas for road trips and for general snacking.

Monday: I did a little searching for “healthier” snacks that would satisfy our need for crunch but also offer some nutritional benefit.  This Roasted Red Pepper Dip fills that bill. 

 
Tuesday: This yummy Asian Flavored Snack Mix works great for eating at home or throwing into a bag for on the run.

Wednesday: I had something very similar to this Crunchy Caramel Corn the night before we left at Bunco and it made me search semi-immediately (read: on the way down to the beach) for a recipe.

 
Thursday: No snack list is complete without an amazing sweet snack. These Chocolate Chip, Oats ‘n Caramel Cookie Squares are always a hit and so easy to make!
 
Friday: Margaritas are on our drink list for the week which means Guacamole has to be on our snack list.
 
Saturday: I logged onto my Facebook yesterday and saw this amazing recipe for Low Fat Granola Bars. They seem like the perfect choice for the ride home!
