What to Cook Wednesdays

I know I’ve blabbed enough about our upcoming vacation but I’m super excited. It seems like my vacation time for the past few years has been spent on maternity leave or spread out over the course of the year in the form of staying home when the kiddos were sick. The last vacation I can remember going on that was longer than a 3-day weekend was October 2008 when we visited Sonoma and Napa, CA.

Vacation presents a (fun) challenge though: lunch. The little ones get lunch at their respective daycares or preschools while the adults typically take leftovers or a Lean Cuisine style meal. It’s rare that we actually fix lunch. Even on the weekend it seems we usually pull out leftovers or eat on the run while we are out. So, in honor of our upcoming vacation that consists of 7 whole days where we will need to make lunch, I give you What to Cook Wednesday…the lunch edition!

Sunday: I figure I will spend a little bit of our first full day there (we arrive Saturday evening) prepping some go to foods for the remainder of the week (cutting veggies, fruit, etc.). A go-to staple for our household is some sort of pasta because it pleases both kids and adults alike. This Roasted Chicken and Bow Tie Pasta Salad looks like it would be both adult and kid friendly with the added bonus of working well if made ahead.
Monday: I’m a big fan of sandwiches…especially when they have something that helps transform them from boring to delicious such as the olive spread found on these Chicken and Roast Beef Muffulettas.
 
Tuesday: Since we are at the beach, it only seems right to take advantage and have some fresh seafood. The Zesty Lime Shrimp and Avocado Salad from Gina’s Skinny Taste looks delicious. We might substitute crab for the shrimp depending on what is fresher where we are.
Wednesday: Another lunch favorite of mine…Egg Salad.
Thursday: Quesadillas are a great crown pleaser because everyone can throw in (or on) whatever they like. This Chicken Quesadilla looks like a great starting point.
Friday: Knowing my eating habits will be less than stellar for the week (its vacation after all), I figure I should throw a healthy salad in here. Enter the Simple Chickpea Salad.
Saturday: We’ll probably end up at a drive-thru on our way back but, in honor of our inevitable chicken nugget lunch, I give you a much tastier way to eat them: Healthier Chicken Nuggets which you saw in action here. Oh, and because I know I won’t be able to resist a final vacation splurge, a Chocolate Malted Milkshake.
Next week, while enjoying a yummy lunch, I’ll try and tackle some snacks! What’s a vacation (or a road trip for that matter) without snacks…
