What to Cook Wednesday time!

With all the party prep going on in our house, I haven’t been cooking a ton but more relying on my meals from the swap to get me by.  I’m looking forward to getting back into things though after the party madness is done.

Sunday:  Family dinner time!  I think we’ll throw some meat on the grill and make Simple Summer Corn Salad to go with it from all the fresh corn I am seeing around.

Monday:  I’m a fan of just about anything with a mexican flair to it.  Stacked Roasted Vegetable Enchiladas will also allow me to try and meet my goal of doing a veggie focused meal once a week.

Tuesday:  Citrus Glazed Pork sounds delicious.  Plus, pork cooks pretty quickly so it is a good option for the weeknight.

[CBSOP], [The Kitchn], [Skinny Taste]

Wednesday:  I’ll have to tweak it a little to make it more week night friendly but Curried Smoked Turkey and Pumpkin Soba sounds delish!

Thursday:  Buttery Garlic Pasta is an easy way to do pasta night!

Friday:  I think I’ll throw some chicken into Black Bean and Heirloom Tomato Quinoa with Lemon Dressing to make it a full meal (not really necessary since Quinoa is a complete protein but Mathlete will prefer it with meat).

Saturday:  I don’t want to leave birthday celebrating too far behind (Mathlete’s is fast approaching) so I think I’ll make Meatloaf Cupcakes with Mashed Potato Frosting to keep the spirit going.
