Weekly Menu – What to Cook Wednesday #99

Happy Wednesday! 
I love that our Wednesdays here on the blog are filled with delicious recipes.  Putting together a weekly menu is so much easier when you can find inspiration all around blog land. 

Sunday:  A stew might sound a little heavy for our warming temperatures but I loved the idea of a red lentil stew so I had to add it!

Monday:  Quesadillas are a favorite for the little ones in my house but I don’t often focus on them for the grown-up.  Seeing these cheesy red bean quesadillas with greens makes me rethink that strategy.

Tuesday:  Tex-Mex is in the house!  Mexican lasagna is such a great twist on a classic recipe.

Wednesday:  One pot meals are what busy mom’s dreams are made of!  This one pot Spanish chicken dish looks delicious and makes my dishwasher happy too!

As I am typing, I realize I included the one pot dish in pictures twice. I guess I just really loved how delicious it looked!

Thursday:  Simple pasta dishes are usually my favorite which is probably what I was drawn to Spaghetti Aglio Olio e Peperoncino (a.k.a spaghetti with garlic, oil and chili).

Friday:  Pork tenderloin encrusted in nuts sounds like a delicious meal to close out our week.

Saturday:  Make broccoli soup a little more spring like by adding a some lemon.

Hopefully you are now inspired to start working on your weekly menu thanks to some of these delicious looking dishes.
