Veggie Noodle Taco Bowl

Taco night takes a slightly different form for the adults in our house these days. Since we have been doing Whole30 and, overall, trying to eat more vegetables, I’ve started making myself a veggie noodle taco bowl instead of traditional tacos for taco night. While this recipe isn’t Whole30 compliant, you could easily switch up a few of the ingredients to make it work. Either way, the recipe still gives you all the deliciousness of tacos but you also get a healthy dose of fresh vegetables too.

Veggie Noodle Taco Bowl

I typically use sweet potato noodles (they are super delicious with browned butter too) but you can substitute any vegetable noodle you like. Most grocery stores sell vegetable noodles now but I have an awesome spiralizer that I love so I save a little money and just make them myself. If you don’t feel like dealing with making your own noodles, definitely check out the produce section in your local store to see what they offer. Mine even had beet noodles recently!

Ingredients for Veggie Noodle Taco Bowl:

1 lb ground beef
3 Tbsp taco seasoning (I love this recipe)
1/2 tsp salt
1/4 tsp black pepper
1/4 cup black beans, rinsed and drained
1/4 cup corn
1/4 cup pico de gallo
1 Tbsp olive oil
3 cups vegetable noodles
2 Tbsp grated cheese

Let’s Make It:

1. Brown ground beef in a medium sized sauté pan. Season with salt, pepper and 2 1/2 Tbsp taco seasoning. Stir in black beans and corn. Cook for 2-3 minutes or until heated through. Remove from heat. Stir in pico de gallo. Set aside.

2. Heat oil in medium sauté pan over medium heat. Add vegetable noodles and cook until just softened. {This will vary based on your type of noodle.} Stir in ground beef mixture. Sprinkle with remaining 1/2 Tbsp of taco seasoning and grated cheese.

The possibilities with this recipe are really endless. You can totally change them up to match your favorite taco. I typically add little bit of salsa from our local Mexican place to mine for a little extra flavor.

    I love zoodles, and I have been buying them at the store but I really should invest in a spiralizer!
