Red, White and Blue Berry Cake

Get ready for Memorial Day and July 4th with this easy recipe for a stunning Red, White and Blue Berry Cake! It doesn’t get better than fresh strawberries and blueberries with delicious cool whip on this red, white and blue cake! So easy to make and so delicious!

I love coordinating food colors to the holidays.  With Memorial Day and July 4th coming up, my head is swimming with ideas of red, white and blue foods.  I made this red, white and blue berry cake the other night as a trial run for our upcoming Memorial Day BBQ and it was so good.  Honestly, it might be the easiest cake to make on the planet too.  Delicious and easy is exactly what I want when throwing together a last minute BBQ for friends.

I had first thought of making a trifle for Memorial Day but was being way to lazy to cut up all those pieces of pound cake.  Instead, I decided to create a layer cake with all of the items I would have had in my trifle. Baking the actual cake part is the only thing that really takes much time.

  • Cake pans
  • Mixing bowl
  • Hand mixer
  • Saucepan
  • Cake stand

Red, White and Blue Berry Cake

Ingredients

  • 1 box yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 8 oz fresh strawberries diced
  • 8 oz fresh blueberries
  • 2 1/2 cups sugar
  • 1/2 cup water
  • 1 large container of Cool Whip
  • Blueberries and Strawberries for garnish

Instructions

  • Preheat the oven to 350 degrees {or per package directions}. Grease two 9-inch cake pans and set aside.
  • Mix together cake mix, eggs, oil and water. Mix on medium speed for 2 minutes. Divide between the prepared pans and bake according to package directions. Remove from oven and cool completely.
  • In a small saucepan, add strawberries, 1/4 cup water and 1 1/4 cup sugar. Bring to a boil and then reduce heat to low. Simmer until reduced by half and thickened. Let cool.
  • In a separate saucepan, add blueberries, 1/4 cup water and 1 1/4 cup sugar. Bring to a boil and then reduce heat to low. Simmer until reduced by half and thickened. Let cool.
  • Place one cake on cake stand. Spread half of cool whip on top. Pour cooled blueberry mixture on top of cool whip and spread evenly. Top with second cake layer. Add remaining cool whip and top with strawberry mixture. Garnish with extra strawberries and blueberries if desired.

Notes

Keep this cake refrigerated until ready to serve.

See, I told you this cake was so easy to make.  Just make the strawberry and blueberry mixtures while your cake bakes and it will all be cool at the same time.  Remember to keep your finished cake in the fridge until you are ready to serve though.  The whipped cream won’t handle room temperature well for long.
