Pizza Night and a Stone Fruit Salad

Ok, we’ve all been there. We are running in 10 different directions, with a to do list that is at least 5 pages long, and solo parenting on top of it. Then, one kid comes home with some major school project (due tomorrow), or it is the weekend of the big gymnastics meet/dance recital/soccer tournament. I’ll admit I am living that right now and so we are having pizza night, and I’m earning my “Running on Fumes” Red Baron® Baroness Patch. I am including a stone fruit salad with our pizza night, but that is just because I can’t go soft and give up on my “fruit and vegetables with all dinners” rule.

For those crazy busy nights, prepare a hot, Red Baron® Classic Crust, Brick Oven or Thin & Crispy pizza. You can even toss together this stone fruit salad and serve it alongside. It makes for an ultimate dinner that only takes a few minutes to get on the table.

Ingredients for Stone Fruit Salad:

2 cups watercress or baby kale
1 peach
1 plum
1/2 cup shelled pistachios
1/3 cup oil and vinegar dressing
1/4 cup crumbled goat cheese

Let’s Make It:

1. Add lettuce to a large bowl. Pit and slice the peach and plum. Add fruit slices to bowl with lettuce. Add dressing and toss to coat.

2. Top salad with pistachios and goat cheese just before serving.

    Pizza night is so easy! We love Red Baron too. Your Stone Fruit Salad looks so yummy, I love fresh peaches!

    This is brilliant. A pizza and stone fruit salad night would be perfect this weekend. This actually my first to make a stone fruit salad and I am excited. It looks really easy. I just need to get some goat cheese. Do you have any other alternatives for cheese?
