Microwave Twice Baked Potatoes {Guest Post}

Some nights, the microwave is our saving grace when it comes t getting dinner on the table. Today, Ariean is sharing an awesome recipe for making microwave twice baked potatoes!

Have you ever “baked” potatoes in the microwave?  It’s so easy…so quick…and they still taste great!  Perfect for evenings when you are short on time for dinner and for kids to start helping with preparing meals.

Once upon a time, I taught Foods classes in High School.  You would not believe how many high schoolers did not know how to use a Microwave.  Shocking, I know!  So, we developed a unit on cooking in the microwave.  This recipe was always a hit and kids would come back to school so excited that they were able to make dinner for their families. #ProudTeacher 

Let’s get started…

Ingredients:

  • potatoes
  • plastic sandwich baggies
  • butter
  • milk
  • Optional toppings (shredded cheese, ranch dressing or powder, bacon bits-and anything else you like on a baked potato)

Start by rinsing and scrubbing potatoes under cold water.  Then, prick with a fork…We don’t want any exploding potatoes.  And yes, that does happen…I might have witnessed an exploding potato a time or two.  Place potatoes into plastic baggies, one per baggie, and seal almost all the way.  Leave about an inch for air to escape.  Arrange potatoes on a microwave safe plate in a sunburst pattern (see photo).

Microwaved Twice Baked Potatoes-OneKriegerChick.com Microwave potatoes approximately 8 minutes, rotating half way during cooking time.  You know they are done if they are soft when you poke them with a fork.

When they are cooked all the way through, use a paring knife to cut the tops off lengthwise.  Potatoes will look like boats.  Carefully scoop out potato filling and place in a bowl.  Be careful not to scoop too close to the sides or the skin will tear.

Once filling is all scooped out, mash it with butter, milk, and shredded cheese.  Start with a little and add more as desired.  Add other ingredients or toppings.  Scoop back into the hollowed out potatoes.  Top with more cheese and microwave about 30 seconds to melt the cheese.
