Loaded Mashed Parsnips and a New Kitchen

Mashed potatoes are so overdone and can be limiting for people who don’t want a lot of carbs. This year, make carb friendly Loaded Mashed Parsnips instead!


This year, we are hosting Thanksgiving for our whole immediate family. That means my home will be packed with the joy of 19 people, including kids. While I am super excited to spend the holiday with close family, it also totally makes me dream of updating my kitchen to make it look better and function better. Loaded Mashed Parsnips

Making Loaded Mashed Parsnips in the midst of other Thanksgiving preparations would be so much easier if I could redesign my kitchen.

Ingredients
  • 1.5 lbs Parsnips peeled
  • 1 medium Potato peeled
  • 2 tsp Salt
  • 1/4 cup Heavy Cream
  • 3 tbsp Butter
  • 3 slices Bacon cooked and crumbled
  • 1/4 cup Sour Cream
  • 1/2 cup Shredded Cheese
  • Chives chopped
Instructions
  1. Cut parsnips and potato into one inch pieces. Place in large pot and cover with water. Add 1 tsp salt. Bring to boil over high heat. 

  2. Once boiling, lower heat and simmer for 12-15 minutes or until very tender. Drain.

  3. Using a potato masher or food processor, mix together parsnips, potatoes, butter, heavy cream, remaining salt and sour cream. 

  4. Stir in bacon pieces and shredded cheese. Top with chopped chives just before serving.

      I used shredded cheddar for this recipe. Shredded Swiss would be great too!
