Healthier Spinach Dip {Paleo}

Being a blogger is funny sometimes. The Super Bowl is still a few weeks away but bloggers typically start thinking about stuff like that AT LEAST a month ahead. Of course, this month limit my tasting abilities since I am in the middle of a healthy eating plan. Never fear though, this healthy spinach dip is exactly what I needed to get me focused on the upcoming big game!

This dip is fantastic with fresh vegetables which is how I ate it {possibly the whole bowl of it…shhhh}. It would be great with bread, chips or crackers too for those that might not really care if their dip is skinny or not.

For those of you following Paleo, you’ll be psyched to know this dip is Paleo. If you don’t care, it just means that you won’t find any dairy or gluten in the dip 🙂 I make it and keep around the house to make eating more vegetables just a little easier.

Healthier Spinach Dip Ingredients:

1 10oz box frozen spinach, thawed and squeezed of excess liquid
1 cup coconut cream
1 cup Paleo mayonnaise
2 Tbsp Paleo ranch seasoning
1/2 cup diced red bell pepper
1 tsp onion powder
1 tsp garlic powder
1 Tbsp lemon juice
1 small can diced water chesnuts {optional}

Let’s Make It:

1) In a small bowl, stir together coconut cream and mayonnaise.

2) In a large bowl, combine spinach, mayonnaise mixture and remaining ingredients. Stir well to combine. Refrigerate for at least 2 hours before serving.

I’ve done Whole30 three times now and I hardly ever make my own mayonnaise. I am just lazy that way. If you are the same, here are two awesome options: Tessemae’s and Primal Kitchen.

If I didn’t tell you that this spinach dip wasn’t the version made from that familiar little packet, you would never know! But, it is filled with fresh ingredients that taste amazing. Grab a pepper strip and dig in.
