Between doing Whole30 and trying to eat Paleo the rest of the time, we eat a lot of cauliflower rice on our house. I like to do most of our meal prep on Sundays to make getting dinner done much easier during our busy weeknights but cauliflower rice was one of those that I just never could do ahead of time. Cauliflower just plain stinks once you cut it. I saw all over Facebook how Trader Joes had frozen cauliflower rice but none of our local stores EVER seem to have it. So, I decided I would figure out how to freeze cauliflower rice at home so I could still do my meal prep on Sundays but not have my house stink all week.

Last week the weather turned really {ridiculously} cold and I turned to a bowl of soup pretty much immediately. Even with these amazing 29 soups, my options for Whole30 were a little limited and I was craving an old favorite. I finished my first week of Whole30 and so I am feeling a little crummy. I always find that days 7-9 are my worst. By day 11, I am feeling good and know I can make it through the month. Paleo Asian Beef

This post is coming to you way late but hey, I’m still on Chicago time 😉 We had an awesome weekend in Chicago for BlogHer Food. I got to meet some fabulous other bloggers and spend time with my good friend, Allyson too! I ate my way through the city which of course prompts to me to turn back to my Paleo Monday routine because I need it more than ever. I certainly can’t complain though about all the amazing donuts, pizza, tapas, pasta and sushi because it was delicious. I mean…look at it!

That was my pasta dish from Eataly. It is simply amazing what a few simple but high quality ingredients can make! I tried to sneak a Parmesan wheel home with me but it was too heavy 😉
