A Busy Mom’s Lunch: Slow Kettle Soup

Lunch is one of those meals that I rarely get to eat. Either I am too busy at work or I am chasing after my two littles and suddenly lunchtime is long past. I’ve been trying to get better about making sure I take time to eat lunch so I am less likely to snack late in the day and mess up my dinner though. I work in an office that is pretty far from any lunch options so I always take my lunch when I am in the office and I’ve started setting a timer for the days that I work from home. Recently, I discovered Campbell’s Slow Kettle soups and they have been the perfect lunch option for me!

I discovered the soups while I was in our local Walmart one day. I typically order our groceries versus shopping in the store so they were new to me. There are a bunch of different flavors and I grabbed the chicken tortilla and baked potato.

The soups are awesome because, while they are best cooked on the stove, I can also take them to work and cook them in the microwave. So, it works out perfect because I can use the stove on my work from home days and pop them in the microwave when I am in the office. Either way, I get a hot and delicious lunch that keeps me full until dinner. If I am extra hungry, I sometimes have a small sandwich with it too.

So far I love the two flavors I have tried and I have some new flavors on my grocery list to try next week when the holidays are over. I think the baked potato will be hard to beat though. It is full of large potato chunks and bits of bacon.
