3 Easy Breakfast Ideas

March 22, 2015 By Shannah Coe 2 Comments

Breakfasts on weekday mornings are crazy around here. I am not typically here for the morning rush because I’ve already been at work for at least 30 minutes before anyone in my house gets out of bed. BUT, I know the hectic pace that our house takes on a weekday morning so I like to have easy breakfast ideas ready to make mornings much easier for the people that do have to feed my kids before school!

3 Quick and Easy Breakfast Ideas

1) Egg Muffins

Egg muffins are an awesome breakfast option because they are packed with protein and you can put just about anything you want in them. I am a big fan of broccoli and cheese or even spaghetti squash versions. I make them on Sundays and then they are ready to pop into the microwave each morning. I let everyone customize 4 so I know they will still want to eat them come Monday morning.

2) Breakfast Burritos

A breakfast burrito is another great way to pack protein and great taste into a quick morning meal. We love the El Monterey Signature breakfast burritos and they only take a minute and 30 seconds to heat up! Right now, the favorite in our house has definitely been the sausage, egg and potato version. Ruiz Foods’ line of El Monterey Signature breakfast burritos are packed with real ingredients like scrambled eggs, cheddar cheese and sausage wrapped in fresh-baked flour tortillas. They are available in four flavors and a variety of sizes, including single-serve, 4-count and 12-count. The products can be found in the freezer aisles at major retailers nationwide, including Walmart, Kroger, Hy-Vee, Meijer and many more.

An added bonus: there is an awesome $1.00 off coupon right now to help you save on an already affordable and delicious breakfast option.

3. Granola

The most delicious homemade pumpkin granola and it is paleo too! Totally Whole 30 compliant.

Homemade granola is a fantastic breakfast option because you can pick and choose what goes in it which really helps to ensure you get a quality option. I love to make a batch of granola on the weekend and then package it into little bags for a grab and go breakfast that is perfect those mornings when we are running really behind. If we have the time, it is great with milk like a cereal too!

What are some ways you make breakfast quick and easy in the morning? Have you tried El Monterey Signature breakfast burritos?
