Hey everyone! It is another exciting week where one of you great readers gets to share your ideas for What to Cook Wednesday.  Today, Helen is here to share some delicious ideas.

Hello everyone!  I’m Helen from Random Bits and I’m thrilled to be bringing you some tasty after-holiday dishes this week.  

Sunday- This Spicy Penne with Turkey is a very tasty dish to use up some of that leftover turkey.  My husband loves to make this dish and looks forward to it every winter.  If you don’t like spicy dishes, either leave the chipotle chilies out, or cut way back on them.


Monday- After all the holiday food, we’re going to be ready for something totally different.  This Baked Pizza Pasta fits the bill.  And it’s a crock pot dish, so not a lot of effort for a hearty, yummy dinner.

Tuesday– I love a good soup in the winter and this Minestronehas been called the best soup I’ve ever made.

Wednesday– BBQ Chicken Quinoa Salad is a nice change of pace for the middle of the week.


Thursday– For some reason, as the end of the week approaches, I feel more and more rushed and more and more tired.  Crab Stuffed Avocados are perfect for those nights you want to put a nice dinner in front of your family, but you’re rushed for time.

Friday– These Chicken Pesto Pockets are a quick dinner for a busy Friday night.  Served with some veggies and dip or a salad, you’ve got a fast, filling meal.

Saturday– Saturdays are busy days around our house.  Vegetarian Shepherd’s Pie, another crock pot meal helps us get our errands run, but still have a hot, tasty meal with minimal cooking time.
