Sunday: Â I love risotto so this barley risotto with butternut squash definitely intrigued me!
Monday: Â I’ve been trying to incorporate spaghetti squash into our diet in place of traditional noodles more often. Â This week, we are going to give Southwestern spaghetti squash a try.
Tuesday: Â It is hard to resist a good buffalo chicken dish. Â These buffalo chicken potato skins sounds super delicious and combine two favorite items. Â
Wednesday: Â Sometimes a salad is the perfect option for a light dinner. Â This pumpkin, spinach, feta and pinenut salad adds a nice fall touch to a salad. Â
