What to Cook Wednesday!

Does your stomach start to growl when you wake up on Wednesdays? Mine does in anticipation of putting together the What the Cook Wednesday feature. I have visions of all the pictures of yummy food and start to get excited the moment I wake up. Yep, I’m a food dork but I own it so that is ok!
Before I get started with all the official stuff like food and recipes, I wanted to share something I read something putting together this week’s WTCW. It pretty much sums up how I feel about food and meals in our home:
“We have an open-door policy when it comes to meals. If I know you, you’re always welcome at our table. If I meet you, I’m likely to invite you over during our first conversation. And if we haven’t met yet, what are you waiting for?”

Now let’s “eat!”

Sunday: We’ve started a little tradition in our house called “Sunday Family Dinner”. We have some “family” members (and any actual family members who happen to be around) over and have a big dinner. Everyone brings something and we all get just hang out. I find it is the perfect ending to a weekend for me and definitely the best way to get ready for the upcoming week. These dinners typically have at least 6 adults and 5 kids so flexibility in the dishes is key!
I think Sweet and Savory Flank Steak sounds like a great candidate. Adults can have it with rice or over a salad and I think the kids will enjoy the sweetness of it too.
Monday: I got a coupon in the mail that gives me extra money off of fish filets this week. I prefer really mild fish so I think I’ll use it to buy some Tilapia and top it with Thai Coconut Curry Sauce.
Tuesday: We are doing H’s birthday party at the local pool so I have been searching for some great pool side recipes. A trial run of Hawaiian Pork for mini-sandwiches sounds like a great idea.
Wednesday: The summer squash at the farmer’s market is a great quality right now. We’ll go vegetarian for a day with Zucchini Gratin to take advantage of the local produce.

Thursday: I’m pretty sure I could live on cheese alone so this Linguini with Two-Cheese Sauce is right up my alley. I’m pretty sure I can even get H to eat it despite her current diet of Pirate Booty and Water (maybe she is training for ANTM)!
Friday: Spicy Honey Chicken sounds like a great combination of sugar and spice. Maybe I will make it into a salad for me!
Saturday: Our local farmer’s market is up and running! Last weekend they had some really gorgeous peppers and onions. Perfect for Grilled Steak Fajitas.
