Pumpkin Muffins with Cream Cheese Glaze

I just can’t get enough of pumpkin this time of year.  One of my favorites things are the pumpkin muffins from Panera.  They come with this delicious powdered sugar dusting on top that makes them taste so delicious. I decided to try and make my own version of pumpkin muffins at home and added a cream cheese glaze to mine over the Panera powdered sugar. They turned out wonderfully so I will definitely be making them again!

These pumpkin muffins are SO EASY and they taste amazing. The cream cheese glaze is a total bonus as the muffins are great even on their own.

 


What You’ll Need:
Muffins:
1 box spice cake mix
2/3 cup water
1 (15 oz) can pureed pumpkin

Glaze:
4 oz cream cheese, softened
1 tsp vanilla
1/2 cup powdered sugar
2 tsp milk {for thinning}

Let’s Make It:
1)  Preheat oven to 350 degrees.  Line a muffin tin with cupcake liners or coat with cooking spray.

2)  Mix together cake mix, water and pumpkin.  Stir or mix in mixer for 2 minutes until everything is well combined and the batter is pretty smooth.

3)  Spoon the muffin mix into prepared muffin tins.  Bake for 15 minutes or until a toothpick inserted into muffin comes out clean.  Let cool completely on a wire rack.

4)  To make glaze, beat the cream cheese in a mixer until smooth.  Add in the vanilla and mix until incorporated.  With the mixer running, slowly add in the powdered sugar and mix until combined.  With the mixer  still running, add in the milk 1/2 tsp at a time until you reach the desired thickness for your glaze.  {If you want them iced, you can easily skip the milk step and leave it as an icing for the top of the muffins}

5)  Once the muffins are cooled, drizzle glaze on top.

      That is my favorite part of this recipe: how easy they are to make. In a pinch, I’ll just dust powdered sugar over them and skip the glaze.
